Introduction

Medan City is one of the major centers of the soybean processing industry in Indonesia. The processed products such as tofu, tempeh, and soy milk play a vital role in the local economy and public health. This study aims to explain the soybean processing process into these products, as well as analyzing the added value resulting from the processing. The soybean processing industry has been growing rapidly in recent years, and it is essential to understand the economic value of these processed products.

The Soybean Processing Process

The soybean processing process begins with the selection of good quality soybeans, followed by cooking steps and fermentation, especially for tempeh. Each product has a method of processing and characteristics of different added value. The processing of soybeans into tofu involves soaking the soybeans in water, grinding them into a paste, and then coagulating the mixture with a coagulant such as calcium sulfate or magnesium chloride. The resulting tofu is then cut into cubes or slices and packaged for distribution.

Added Value Analysis Method

This study uses the added value analysis method with the Hayami Calculation Approach and Descriptive Analysis, in order to get a clear picture of the economic value resulting from these processed soybean products. The Hayami Calculation Approach is a method used to calculate the added value of a product by subtracting the cost of production from the selling price. The Descriptive Analysis is used to describe the characteristics of the added value of each product.

Results of the Analysis

The analysis shows that the added value obtained from soybean processing becomes highly tofu, which is Rp. 10,188.5 with an added value ratio of 54.43%. Tempe as other processed soybean products also shows positive results, with an added value of Rp. 16,801 and the added value ratio reached 65.88%. Meanwhile, soy milk products recorded the highest added value, which was Rp. 47,528.93 with a added value ratio of 70.41%.

Comparison of Added Value of Soybean Processed Products

From this result, it can be seen that the processing of soybeans into soy milk provides the most significant added value compared to tofu and tempeh. This shows the great potential of soy milk products, both in terms of economic and health. Soy milk is rich in nutrition and is an alternative for people who are intolerant of lactose, so that demand tends to increase.

In the economic context, this increase in added value can be an indicator to encourage the development of the soybean processing industry in the city of Medan. Industrial players are expected to be able to take advantage of this analysis to improve product efficiency and quality, as well as develop new innovations in soybean processed products.

This study has several limitations, including:
