Introduction

The production of vegetable leather has become increasingly popular in recent years due to its potential health benefits and versatility in food products. This study aims to investigate the effect of these factors on the quality of vegetable leather.

Methodology

This study was conducted at the Food Technology Laboratory, Faculty of Agriculture, University of North Sumatra, Medan, using a complete random design (RAL) of two factors. The first factor is the ratio of carrot juice and pumpkin porridge (B) with four levels: 80%: 20%, 60%: 40%, 40%: 60%, and 20%: 80%. The second factor is the addition of pectin (P) with four levels: 0.5%, 1.0%, 1.5%, and 2.0%. The parameters measured include moisture content, ash content, vitamin C content, total dissolved solids, crude fiber content, pH, color index, hedonic organoleptic value of color, aroma, and taste, as well as organoleptic value scores of texture.

Results

The results showed that the ratio of carrot juice and chayote porridge had a very significant effect on water content, ash content, vitamin C content, color index, and texture organoleptic score scores. The addition of pectin also has a very significant effect on water content, ash content, vitamin C content, crude fiber content, and texture organoleptic score scores. The interaction of the two factors significantly affects the water content and ash content.

Discussion

The comparison of carrot juice and chayote pubes (20%: 80%) with the addition of pectin (1.5%) produces the highest quality vegetable skin and is most accepted. This indicates that the use of chayote is more dominant in comparison with carrot juice, along with the addition of 1.5% pectin, capable of producing vegetable skin with better characteristics.
