Introduction

Chinese girlfriend, a popular food product in Indonesia, is usually made using starch tapioca or sago. To overcome this problem, in-depth research is needed to get a Chinese girlfriend formula that utilizes the ratio between Talas starch and potato starch, as well as the amount of dough water that produces the best quality and can be accepted by panelists.

Background

Chinese girlfriend is a traditional food product in Indonesia, made from starch tapioca or sago. However, the use of taro starch and potato starch as an alternative source of starch for this product is still minimal. Taro starch and potatoes contain nutrients that can contribute to health, such as fiber, vitamins, and minerals. The use of taro and potato starch can reduce dependence on traditional starch such as tapioca and sago, as well as opening new opportunities for food products innovation.

Methodology

This study uses a complete random design method (RAL) with two factors. The first factor is the ratio between taro starch and potato starch (P), with a variation of 80%: 20%, 60%: 40%, 40%: 60%, and 20%: 80%. The second factor is the amount of dough water (A) with a variation of 45%, 55%, and 65%. The results of the study showed that the ratio of taro starch with potato starch had a very significant effect on starch levels, amylose levels, amylopectin levels, and texture score scores. In addition, the amount of dough water also has a significant impact on the water content and ash content in the Chinese girlfriend's products.
