Introduction

The utilization of shrimp skin waste to produce water-soluble chitosan is a significant step forward in the biomaterial industry. The parameters measured include the organoleptic value of color and aroma, total microbes, clarity of solution, viscosity, relative stability, and saturated concentration of the solution.

Results

The results of this study showed that the heating temperature had a very significant effect on the organoleptic value of color, viscosity, and relative stability of the water-soluble chitosan solution. The heating temperature did not have a significant effect on the organoleptic value of aroma, total microbes, clarity of solution, and saturated concentration of water-soluble chitosan solution.

On the other hand, the concentration of CO2 gas had a very significant influence on the total microbes, clarity of solution, viscosity, relative stability, and saturated concentration of water-soluble solutions. The CO2 gas concentration did not have a significant effect on the organoleptic value of color and aroma.

The interaction between heating temperatures and CO2 gas concentrations had a significant effect on the color organoleptic values, but had no significant effect on the organoleptic value of aroma, total microbes, clarity of solution, viscosity, relative stability, and saturated concentration of water-soluble solutions.

Discussion

The results of this study indicate that the heating temperature is 80 ° C and the concentration of CO2 gas 20% produces the highest quality water-soluble chitosan. A high heating temperature helps in the process of deacetylation of chitosan, increasing its solubility in water. High CO2 gas concentrations play a role in reducing the number of microbes and increasing the viscosity of chitosan solutions.

The knowledge of the effect of heating temperature and CO2 gas concentration on the characteristics of water-soluble chitosan is very important in the optimization of the chitosan making process. The results of this study can be applied in the industry to produce water-soluble chitosan with better quality, so as to increase the economic value of shrimp skin waste and open up opportunities for the development of various chitosan derivative products.
