Introduction

Results and Analysis

The results showed that the highest protein content in kefir was obtained at a ratio of 40:60, with a value of 1,4412%. Meanwhile, the results of the antioxidant activity test showed that the variation was capable of producing a supressate of 132,7653 ppm. After the treatment period for three weeks, the dose of 0.018 ml/kg BW is proven to be the best variation in reducing blood glucose levels of Wistar mice induced by STZ.

This decrease in glucose levels shows the positive potential of the combination of kefir milk and pineapple stubble extract as a dietetic intervention for diabetes management. Kefir itself is rich in probiotics that can support digestive health and improve glucose metabolism, while pineapple stubble extract contains bioactive compounds that can contribute to hypoglycemic effects.

Conclusion
