Introduction

The food industry, particularly in Indonesia, faces significant challenges in increasing productivity and production efficiency. One of the main obstacles is the process of slicing potatoes, which takes time and produces products with unsatisfactory quality. To overcome this problem, the use of mechanical chips slicing tools is a promising solution. This study aims to determine the most appropriate potato varieties to produce chips with large amounts and good quality.

The potato chips industry in Indonesia is a significant contributor to the country's economy. However, the industry faces several challenges, including the high cost of labor, limited production capacity, and the need for high-quality raw materials. The selection of potato varieties is a critical factor in determining the quality and quantity of potato chips produced.
