Introduction

The TPC analysis method is used to assess fish resistance to microbial growth, while organoleptic tests are carried out to evaluate the freshness and feasibility of fish consumption. The results showed that the best liquid smoke was obtained from the stammer of run I, with a level of acetic acid compounds of 67.23%, phenol 17.20%, and carbonyl 15.24%. This liquid smoke is proven to be able to preserve fish for up to five days with TPC test results reaching 5 x 10^5 colonies/grams in the inside of the fish.

Results and Discussion

The results of this study demonstrate the effectiveness of liquid smoke as a fish preservative. The best liquid smoke was obtained from the stammer of run I, with a level of acetic acid compounds of 67.23%, phenol 17.20%, and carbonyl 15.24%. This liquid smoke is proven to be able to preserve fish for up to five days with TPC test results reaching 5 x 10^5 colonies/grams in the inside of the fish. In the organoleptic aspect, the test shows the value of aroma 7, the appearance of fish eye 7, the color of the gill 6, and texture 7, which shows that the fish is still in good condition and is suitable for consumption after being soaked in the liquid smoke.
