Research Results

The results of this study showed that the comparison of different raw materials had a very significant effect on some of the physical characteristics of analog rice, such as density, 1000 grains, color index, protein content, fat content, carbohydrate content, crude fiber content, starch content, amylopectin levels, as well as hedonic value of color and aroma. However, there was no significant effect on water content, ash content, and texture hedonic value.

The best formulation of analog rice was obtained from the treatment of P1 (50% MOCAF: 30% starch cassava), which had the lowest glycemic index (IG) of 62.57 mg/dl, which is included in the medium category, as well as the value of digestibility of 69, 22%. This shows that analog rice from the mixture is not only good quality in nutritionally, but also has the potential to be accepted by the market.
